The Galley Supervisor is responsible for supervising the daily operations of the galley to ensure the safe, efficient, and timely preparation and service of high-quality food for guests and team members. This role oversees culinary support staff, ensures compliance with food safety and sanitation standards, manages food production schedules and inventory controls, and supports the delivery of exceptional guest experiences. The Galley Supervisor works closely with Culinary, Food & Beverage, Stores, and Operations teams to maintain operational excellence while fostering a safe, productive, and collaborative work environment.

ESSENTIAL DUTIES & RESPONSIBILITIES: 

Galley Operation & Food Production 

  • Supervise the daily operation of the galley to ensure efficient food preparation and service. Coordinate production schedules based on ship arrivals, guest volumes, special events, and operational requirements. Ensure all menu items are prepared according to approved recipes, quality standards, portion control requirements, and presentation guidelines while minimizing waste.

Team Leadership and Performance 

  • Supervise, coach, train, and develop galley team members. Assign daily work, conduct shift briefings, monitor performance, support onboarding, provide coaching and corrective action when required, and ensure appropriate staffing levels to meet operational demands.

Food Safety Compliance & Quality Assurance 

  • Ensure compliance with HACCP, food safety, sanitation, public health, and company standards. Monitor food handling, storage, temperatures, cleaning schedules, and kitchen inspections while ensuring all food safety concerns are addressed promptly.

Inventory Equipment & Cost Control 

  • Monitor inventory levels, support receiving and storage of products, ensure FIFO stock rotation, assist with inventory counts, reduce food waste, report shortages, and ensure kitchen equipment is safely operated and properly maintained.

Guest Experience Safety and Support 

  • Support exceptional guest service by maintaining food quality and responding to operational issues. Promote workplace safety, environmental sustainability, and compliance with company policies while performing other duties as assigned.

SKILLS SPECIFICS:

  • Experience coordinating food production, staffing, and service delivery within fast-paced operations.
  • Experience leading, coaching, and developing culinary teams while managing employee performance.
  • Demonstrated knowledge and application of HACCP, food safety, sanitation, and public health standards.
  • Experience with inventory management, food cost control, receiving, stock rotation, and waste reduction initiatives.
  • Provides day-to-day supervision of galley personnel by assigning work, monitoring performance, coaching employees, conducting shift briefings, supporting onboarding, and promoting a culture of teamwork, accountability, professionalism, and continuous improvement. 
  • The role provides operational leadership and collaborates closely with cross-functional departments to ensure successful daily operations.

EDUCATION & QUALIFICATIONS:

  • High school diploma or equivalent. 
  • At least 2 years of supervisory experience in a commercial kitchen.
  • Food Safety or HACCP certification, or the ability to obtain certification.
  • Minimum 3–5 years of culinary experience in hotels, resorts, cruise ships, or high-volume food service operations. 

LANGUAGE REQUIREMENTS: 

  • Excellent written and verbal communication and interpersonal skills.

PHYSICAL REQUIREMENTS:

  • Must be physically fit. 
  • Ability to work in an outdoor environment as needed.
  • May need to stand for long periods of time.

OTHER REQUIREMENTS: 

  • May be requested to work a shift schedule while at any of the destinations. 
  • Understanding of workplace policies and procedures 
  • Familiarity with team collaboration tools and techniques.
  • Strong time management and organizational skills
  • Ability to maintain reliable and consistent attendance 
  • Capacity to be punctual and meet deadlines 
  • Ability to collaborate effectively with colleagues and work as part of a team 
  • Demonstrated professionalism in all interactions and tasks.
